    The air is getting a bit crisper and the days a bit shorter -- and that means fall is in full swing.

    Fall fruits and veggies are some of the best and healthiest around. There are many creative ways you can use them to make snacks that are sweet, savory, salty and everything in between.

    With that in mind, we rounded up 7 tasty fall treats you’ll want to make again and again.

    1. Candy Corn Parfait

    It may look like that sugary childhood treat, but this candy corn parfait is actually packed with tasty nutrition. It’s quick, easy to make and a festive way to remind enjoy the holiday without going overboard on sugar and calories.
     

    Ingredients


    - 1/2 cup pineapple chunks
    - 1/2 cup orange slices, cut into chunks
    - 1/4 cup unsweetened yogurt
    - 1 Tbsp raw honey
    - 1/2 tsp vanilla extract
     

    Directions


    1. In a clear glass tumbler, layer the pineapple chunks and then the orange chunks.

    2. Mix the yogurt, vanilla extract and honey thoroughly together.
    Spoon the yogurt mixture on top of the fruit.

    2. Apple Pie Baked Apples

    Once you get past how cute these little things are, you’re going to go nuts over the flavor, too. The recipe is less complicated than you’d think, and they yield the perfect fall treat -- something you can enjoy on your own or share with friends or family.
     

    Ingredients


    - 3 Granny Smith apples
    - 3 pink lady apples
    - 1 tbsp. warm water
    - 2 tsp. cornstarch
    - 2 tbsp. unsalted butter
    - Juice from 1/2 a lemon
    - 1 tsp. cinnamon, plus more for sprinkling
    - 1/3 c. granulated sugar, plus more for sprinkling
    - 1 pie crust
    - 1 large egg beaten with 1 tbsp. milk (egg wash)
    - Caramel, for drizzling
     

    Directions


    1. Preheat oven to 375°.

    2. Peel and dice one green and one red apple. Slice off the tops and, using a melon baller, hollow out the remaining apples. Set aside.

    3. In a small bowl, whisk together warm water and cornstarch.

    4. In a small saucepan over medium heat, melt butter. Add diced apples, lemon juice, cinnamon, and sugar. Bring to a simmer and cook until apples are tender, about 5 minutes. Add in cornstarch mixture and cook 5 minutes more.

    5. Place hollowed out apples in a baking dish and fill with cooked apple mixture.

    6. On a piece of wax paper, roll out pie dough and cut into 4 circles. Slice each circle into thin strips. Make a lattice top on each apple, trimming any excess.

    7. Brush crust with egg wash and sprinkle with more cinnamon sugar. Bake until apples are tender and crust is golden, 28 to 30 minutes.

    8. Drizzle with caramel and serve immediately.

    3. Cinnamon Baked Pears

    Pears and cinnamon -- what could go wrong? Absolutely nothing with this scrumptious goody. The mixture is baked right into the pears center, making a gooey dessert that will have you firing up the oven again and again.
     

    Ingredients


    - 4 ripe pears
    - 1/2 c. melted butter
    - 1 tbsp. cinnamon sugar
    - 1 c. old-fashioned rolled oats
    - 1/2 c. Finely Chopped Almonds
    - 1/3 c. brown sugar
    - 1 tsp. ground cinnamon
    - kosher salt
     

    Directions


    1. Preheat oven to 400º. Halve pears and scoop out some of the center to fit the oatmeal crumble. Brush insides of pears with 2 tablespoons melted butter and sprinkle with cinnamon sugar.

    2. In a medium bowl, combine oats, almonds, brown sugar, cinnamon, and a pinch of salt. Pour remaining melted butter into bowl and combine until fully coated.

    3. Spoon into pear halves.

    4. Bake until pears are soft, 35 to 40 minutes.

    5. Top with a small scoop of vanilla ice cream and serve warm.

    4. Pumpkin Pie Hummus

    Pumpkin pie taken to the next level -- that’s what you’ll get with hummus made to taste like that classic fall favorite. Bust out some celery, carrots and cucumbers to serve with it, and every bite will feel like fall.

    Calories: 60 per 2 tablespoons


    Ingredients:


    - 1 can garbanzo beans
    - 2/3 cup pumpkin puree
    - 1/3 cup Greek yogurt
    - 1/4 cup maple syrup
    - 2 teaspoons pumpkin pie spice
    - 1/4 teaspoon cinnamon
     

    Directions:


    1. Add the ingredients to the food processor or blender. Pulse until combined, then blend on a higher speed until the hummus has a creamy consistency.

    2. Serve with your favorite dippers.

    5. Pumpkin Pie Smoothie

    While we’re on this whole “pumpkin pie” kick, why not a drinkable version? This smoothie not only tastes like pie-in-a-glass, but it’s packed with protein, fiber and beta-carotene (helps the eyes). Yum!

    Ingredients


    - 1 cup low-fat milk
    - 3/4 cup pumpkin puree
    - 1 Tbsp almond butter
    - 1/8 tsp ground nutmeg
    - 1/4 tsp ground cloves
    - 1 tsp vanilla extract
    - 1 tsp honey
    - 4 ice cubes
     

    Directions


    Blend ingredients together, and enjoy!

    6. Baked Figs with Goat Cheese

    Figs are a versatile fruit -- they work well in sweet or savory dishes. Combine them with some goat cheese, walnuts, sage and honey, and suddenly you have something that shines as a snack or an appetizer that impresses time and time again.

    Yields: 6

    Ingredients


    - 6 medium-sized figs
    - 80 grams or 2.8 oz soft goat cheese
    - 2 tablespoons chopped walnuts
    - 1 tablespoon chopped sage
    - 2 tablespoons honey
    - salt and freshly ground black pepper to taste
     

    Directions


    1. Preheat the oven to 200 °C or 390 °F. Cut off the stems and make an X cut in the top of each fig half way through.

    2. Stuff the figs with soft goat cheese using a teaspoon. Sprinkle some chopped walnuts and sage over your stuffed figs and drizzle them with honey. Add salt and freshly ground black pepper to taste. I used Le Creuset rectangular baking dish for this recipe and it was just the right size.

    3. Broil for about 5 minutes or until they look soft and release juice. Serve them warm or cold with a glass of wine. Enjoy!

    7. Broccoli Cheese Bites

    Vegetables never have to be boring. That’s especially the case with these mouth-watering, cheesy bites of broccoli goodness.

    Yields: 4
    Calories: 175


    Ingredients


    - 2 cup broccoli, florets
    - 2 large eggs
    - 1/2 teaspoon salt
    - 1/2 cup panko (Japanese bread crumbs)
    - 2 ounce Parmesan cheese, grated
    - 2 tablespoon olive oil


    Directions


    1. Steam broccoli just until fork-tender.

    2. Add broccoli, egg, salt, bread crumbs, and Parmesan to a food processor; blend just until finely chopped. Using 1 tablespoon at a time, form into balls.

    3. Heat oil in a skillet. Drop balls of broccoli mixture into hot oil, flattening with a spatula. Cook both sides until crispy.

    4. Serve warm.
